Raw Vegan Lemon Bars

I love lemon. Lemon anything! Here is a treat that is lemony, full of fiber, healthy fat and protein (thanks to the hemp seeds). 


1 cups walnuts
1/4 cup hemp hearts
1 1/3 cup unsweetened coconut shreds
1 tsp pure vanilla extract
1/4 tsp pink sea salt
1 1/2 cups of Medjool dates
the zest and juice of 2 lemons

Put all the ingredients into the food processor except for dates and process until the mixture has a crumbly texture, add in the dates. Process until the dates are well blended into the the nut mixture. 

Sprinkle the bottom of a pan with coconut and press the date/nut mixture into the pan. Refrigerate for a couple of hours and slice into squares. Store in the refrigerator or freezer.

15 servings.
